Gluten-Free Cashew Cacao Teff Brownies
- 1/2 cup cashew butter
- 2 tbsp coconut oil melted
- 1/2 cup maple syrup
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup teff flour
- 3/4 cup cacao powder
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup almond milk
Preheat oven to 350 degrees Farenheit
In a small bowl, whisk together cashew butter, melted coconut oil, maple syrup, almond milk, eggs & vanilla.
Mix dry ingredients (teff, cacao, baking powder & salt) in a separate bowl.
Combine all ingredients; spread into 8X8″ pan. Bake in oven for about 30 minutes or until a wooden toothpick inserted near the edges comes out clean.
Teff is a grass native to Ethiopia which provides calcium, protein & fiber. The flavor of teff complements the flavor of chocolate well. You can buy teff already ground into flour (such as from Bob’s Red Mill: https://www.bobsredmill.com/teff-flour.html). These brownies have a cak-ey consistency to them.
